Here's something to tempt your tastebuds: tender and aromatic slices of turkey fillet with the enchanting taste of smoked pancetta and rich aroma of ajvar. Served with a mix of fresh crispy greens and a glass of fragrant white wine, this juicy turkey fillet with ajvar is a great idea for both lunch or dinner, and will satisfy even the most seasoned of gourmets.
Turkey fillet is considered to be one of the healthiest poultry meats as it is very lean and rich in omega 6 fatty acids, vitamins, and minerals like potassium and Vitamin A. In addition to it being packed with nutrients, turkey fillet is full of flavor!
If you wish to keep the meat soft and juicy, thickly slice the fillet and grill it in the oven. Or, if you want to use fillings such as the one prepared in this recipe, marinate the meat with a touch of lemon juice and vegetable oil. This will soften the meat further, releasing the fillet's natural aromas and juices. Yum, if we may say so ourselves.

Ingredients
2 large thinly slices of turkey breast fillet
100g olives, pitted
1 lemon
1 bunch of fresh parsley
2-3 tbsp of ajvar
4 slices of pancetta
1-2 cups oil
salt to taste
Directions
Pound turkey with meat mallet as thinly as possible, sprinkle with salt and lemon, and leave for 10 minutes.
Finely chop olives, pancetta and parsley, and mix with ajvar.
Spread on half of each fillet, roll them up and secure with toothpicks.
Fry rolled fillets evenly on all sides in hot oil.
When done, remove the toothpicks, cut in halves and serve with a mix of green salads.
