Rustic savoury vanilla cookies with ajvar, scented with olive and truffle paste and enriched with parmesan cheese, come from the Coolinarija blog by Nataša Vitezović. These are one of those cookies that we can’t say no to and that we can’t stop nibbling on until we get them all off the plate, so we warmly recommend them, both for parties and for every occasion when you start missing the warmth of authentic home-made meals.
200 g flour
1 teaspoon of salt
60 g parmesan cheese
60 g butter
50 ml olive oil
1 teaspoon of olive and truffle paste
Mix flour, salt, and grated parmesan cheese together and then add butter at room temperature, olive oil, olive and truffle paste, and an egg. Knead the dough until soft and smooth. Then wrap it in a stretch film and let stand in the fridge for half an hour.
Roll the dough out until it's about 3 mm thick, and then, using a round mould or a small cup, cut the dough and place the parts one by one into a baking tray covered with baking paper. Knead the remaining dough together and use it in the same way.
Bake the lined up savoury vanilla cookies in a pre-heated oven at 180ºC until slightly golden brown around the edges. Then carefully take the baked savoury vanilla cookies out of the baking tray and let them cool down completely. Spread ajvar over these vanilla cookies just before you serve them.
