Four cheese pizza with ajvar

Ah pizza! There is not much to say about this most popular snack from Italy that has not been told yet. Or tried. We can eat pizza always and on all occasions. We equally like the classic pizza such as this four cheese pizza, as well as all new creative taste combinations, from salty to sweet pizza. By the way, the first pizza did not have any topping at all. It actually originated from fast food for the poor on the streets of Italy, and got famous owing to Queen Margaret, for whom the first pizza with topping in the colors of the Italian flag, tomato, mozzarella and basil was especially made.

Genuine pizza is characterized by soft, thin dough with a crispy crust, just as it is made in Italy and as we present it to you in this recipe. Following this recipe, the pizza is made easier than you think and once you try, we are sure that you will be returning to this home-made version of pizza. And as far as the topping is concerned, we were thinking this way: What would refresh and enhance the flavor of perfectly soft dough and juicy melted cheese with their taste and aroma for an exceptional gourmet bite? Ajvar, of course!

- 500g white flour, and extra flour for dusting

- 1 package fresh yeast (10g)

- salt to taste

- 1-2 tablespoons oil

- fresh basil or spices (optional)

- 200g ajvar

- 3dl lukewarm water

- 200g different cheese of your choice: blue cheese, mozzarella, melted full-fat cheese


In a large bowl, combine the flour and salt and knead smooth dough by adding yeast dissolved in lukewarm water. Shape the dough into a ball and allow to stand in a warm place under a damp cloth for 5 minutes. Thereafter knead dough the well until smooth and divide into two balls. Place the dough on a kitchen towel dusted with a little flour, cover with a damp cloth and allow to stand in a warm place to rise for about 30 minutes.

During this time, prepare the cheese and spices.

Stretch the dough thin in a diameter of about 40cm by making the edges slightly thicker than the rest of the pizza. Place the pizza on a slightly greased baking sheet, brush with a little oil and sprinkle with a mixture of cheese and spices. Bake in a preheated oven at 250°C for 5 to 7 minutes, until the cheese melts. Decorate the finished pizza with some ajvar and fresh basil.
