

Bruschetta with ajvar and goat cheese

Anything you can finely chop, spread, bake, melt, grill, that releases an aroma and seduces you with flavor, will also make for a gorgeous bruschetta topping.
For these crunchy, warm, juicy bruschetta we chose our favorite authentic ajvar made from premium roasted red pepper, and full-fat goat cheese.
They are simple to make. And quick, they barely take ten minutes. In fact, it is so quick and simple that it’s really more of an idea than a recipe.
And yet, as soon as the oven was opened, the kitchen was filled with seductive scents of warm slices of bread soaked with creamy, juicy ajvar, topped with sizzling white patches of melted goat cheese. Lured by the aroma, our whole company somehow suddenly ended up in the kitchen, for bruschetta tasting. And just so you know, the first batch never even made it from the pan to the serving platter, so count on making seconds, and make sure there is plenty for everyone.

Ingredients
1 white baguette (cca 15 bruschetti)
15 tsp of Grandma’s Secret ajvar
15 slices of full-fat goat cheese
fresh basil and capers to taste
Directions
Cut up baguette into thinner slices, and spread each one with a mixture of ajvar and finely chopped basil.
Next, top with a thin slice of goat cheese, and garnish with capers, if you like. Arrange slices of bread into a pan lined with baking paper, and bake in the oven for 7-10 minutes at 200C.
