Puffy triangles with ajvar

It’s weekend. There is plenty of time to turn on your oven and make something tasty and healthy for breakfast, and make your household members happy – yourself included. You’ve tried a lot of things already, and you’re starting to repeat yourself. We present you with a refreshing take on your breakfast routine.
Puffy triangles with ajvar - a simple recipe with few ingredients. Thin pie crusts filled with a mix of ajvar and eggs, folded into triangles and baked in the oven.
The end result: puffy triangles, crispy on the outside, soft on the inside. To round off this tasty treat, dip it into some creamy Greek yoghurt. You’re welcome.

- Yields: 6 triangles
400g thin pie crusts
4 tbsp of ajvar
1 tbsp oil
3 tbsp sparkly water
salt to taste
Cut up double layered pie crusts into large squares that will be folded into triangles.
Scramble eggs, mix in ajvar and a bit of salt if desired.
Lightly spray the inside of each triangle with a mixture of oil and mineral water, add the egg and ajvar stuffing, and fold into triangular packages.
Glaze the tops of triangles with the remaining water/oil mixture, and sprinkle with a little salt.
Place in a pan lined with baking paper and bake for 15 minutes at 200C.
