Veggie balls in tomato and ajvar sauce

More and more people are making a conscious decision to cut out meat and animal based foods. The motives are many, but once the decision is made, new vegetarians and vegans start exploring the new world of possible combinations of ingredients.
Veggie balls in ajvar sauce is a recipe that could easily become one of the first choices.
Red beans are the base of this dish. They are very good for you, and it’s recommended to eat them daily as they are high in fiber, low in fat and rich in proteins, which makes them a great alternative for meat.
And to make our veggie balls juicier, we’re going to drench them in ajvar sauce, then pop them in the oven, and serve them with pasta of our choice. We recommend them as lunch, or dinner.

Ingredients

250g of boiled red beans

1 onion

1 bunch of fresh parsley

2-3 tbsp of ajvar

4 tbsp of ground flax seeds

600g tomato puree or finely chopped peeled tomatoes

1 bunch of fresh basil

2-3 cloves of garlic

1,5 cup oil

salt and pepper to taste

Directions

Veggie balls:

Use a blender to mix beans, onion and parsley into a thick paste. Add ajvar, season with pepper and salt, and gradually add ground flax, one spoonful at a time, to make a thick paste you can form balls with.

Fry in hot oil for a few minutes, until brown.

Tomato sauce:

Finely chop basil, and briefly fry in hot oil. Add tomatoes, whole garlic cloves and stew on low heat for 15-20 minutes.

Season with salt and pepper at the end.

Toss veggie balls in the sauce and bake them in the oven, or serve with your favourite pasta.
