Turkey fillet with pancetta and green pepper ajvar

Time to make a bit of mess and chaos in the kitchen. Oh, let’s not pretend, when was the last time you’ve seen a pristine kitchen? On TV, possibly. Perhaps the noise and creative mess will bother your cohabitants, but once they get a taste of this, all will be forgiven.
Turkey fillet stuffed with pancetta and green pepper ajvar is a recipe that starts with a meat hammer. If you don’t own the likes of such, you can use a rolling pin, a cutting board, or any other household object sturdy enough to serve the purpose. Which is to make the turkey as thin as possible, in order to tenderize it.
If you’ve got this part right, everything else is just a formality. In 30 minutes time you will be serving a juicy, melt-in-your-mouth lunch, or dinner.

2 large thinly slices of turkey breast fillet

100g olives, pitted

1 lemon

1 bunch of fresh parsley

2-3 tbsp of green pepper ajvar

1 cup oil

salt to taste


Pound turkey with meat mallet as thinly as possible, sprinkle with salt and lemon, and leave fot 10 minutes.

Finely chop olives and parsley, and mix with green pepper ajvar.

Spread on half of each fillet, roll them up and secure with toothpicks.

Fry rolled fillets evenly on all sides in hot oil.

When done, remove the toothpicks, cut in halves and serve with a mix of green salads.
