Ajvar and fish? Oh yes! Do not take our word for it, just try it! We sure enjoyed eating it! The fresh flavors of gentle salmon meat, cottage cheese, fresh spices and lemon combined with the rich taste of ajvar with olive oil will satisfy even the most sophisticated palate.
For this sandwich, use thinly sliced fresh salmon fillets already prepared for use. We coated our fillets and left them to absorb the mixture of spices and flavors that traditionally go well with the pink meat of this high-quality fish. So flavored, we placed them on the cover of the cottage cheese and covered with ajvar, which with its distinctive sweet and slightly smoked flavor made this dish even juicier and tastier.
You can put this combination of flavors into a sandwich for a great breakfast, lunch or dinner. And with a bit of arranging and fine pastries or mini toasted pieces of bread, the prepared salmon and ajvar can be made into elegant canapés for a true summer celebration.
2 tablespoons of cottage cheese
1 smaller onion
1 smaller bunch of dill
juice of 1 lemon
200g fresh salmon fillets cut in thin slices
salt and pepper to taste
ajvar with olive oil
Mix the finely chopped dill with fresh lemon juice, season everything with a pinch of salt and pepper, and then coat each piece of salmon with the dressing and leave ten minutes in a cool place, so the meat can absorb all the flavors, then layer the sandwich.
Spread the cheese on a slice of bread, put a pair of thin onion rings, a piece of salmon and cover with the second slice of bread onto which you spread ajvar with olive oil.
