Sandwich with chick peas and ajvar (with olive oil)

This sandwich can be prepared in two ways. You can make it by simply putting cooked chick peas along with other ingredients between two pieces of bread, or, if you can spare about ten to fifteen minutes, you can easily and quickly convert these seemingly simple ingredients into a delicious meal with crispy chick peas coated in spices and caramelized sweet onions. With a little fresh mint and ajvar with olive oil it will become a true little gourmet enjoyment for the senses.
Chick peas are one of those marvelous gifts of nature that contain plenty of good and healthy ingredients. They are a great source of proteins, minerals such as iron, zinc and magnesium, fiber and vitamins. Before cooking them, you have to submerge them in water and let them stay like that, ideally overnight, so the grains could swell. Rinse them thoroughly, pour water roughly in the ratio of 1:2 and put on the stove. When they boil, reduce heat and simmer for about 90 minutes. You can cook them in bulk in this way, proceed to drain and freeze them, to be used as needed. Since chick peas can be used in both sweet and salty dishes, do not salt the water in which they are cooked. If you do not have time to cook the chick peas, you can use canned ones, just remember to rinse them thoroughly under running water and drain before use. Another good thing about chick peas is that their mild nutty flavor matches perfectly with the rich flavors of a real homemade ajvar. And when we add the sweet caramelized onion rings accented with the freshness of mint to these flavors, we are left with no choice but to take a seat at the table and enjoy.

100g cooked chick peas
1 level teaspoon of dry red pepper
1 smaller red onion
1-2 teaspoons of coconut sugar
1 tablespoon of balsamic vinegar
salt and pepper
1 tablespoon of oil
about 10 leaves of fresh mint
Drain the chick peas well, season them with a little salt, pepper and dry red pepper, and mix it well to coat it with spices. Toast them briefly on all sides in a well-heated pan without oil, or bake in a preheated oven at 200C in a baking pan lined with baking paper for about 5-10 min.
Cut the cleaned onion into thin rings. In a preheated pan, add a tablespoon of oil and place onion rings. Sprinkle them with sugar and simmer a few minutes until they start to caramelize. Add a tablespoon of balsamic vinegar and a pinch of salt and stir gently so that the onion rings keep their shape as much as possible. Let simmer for immer a few more minutes until the sauce reduces and the flavors mix well together.
Spread the ajvar on bread slices or toasted bread, add a layer of toasted chick peas, cover with caramelized onions and finally garnish with fresh mint leaves.
