Pancakes with ajvar

Savoury pancakes are always a good idea, especially when they are scented with aromatic herbs and a mouth-watering aroma of home-made ajvar. We also recommend them because they are easy and quick to make, while their main ingredients are quinoa and ajvar, which makes them a light and healthy breakfast or dinner choice. 3 teaspoonfuls of ground flax seeds

180 g quinoa flour

60 g corn flour

2 to 3 tablespoonfuls of ajvar with olive oil

2 pinches of finely cut fresh thyme

around 120 ml carbonated mineral water or still water

Salt and pepper to taste


In a separate bowl of smaller size, mix up flax seeds with about 9 teaspoonfuls of water, just enough to cover the seeds and then leave stand for about ten minutes until flax seeds puff up.

In a different bowl, mix flours, spices, and add a pinch of salt and pepper. Add flax mixture, ajvar, and while stirring, add, if necessary, carbonated or still water until you get thick, rubbery mixture.

Heat a pan until very hot and ladle a spoonful of the pancake mixture, cooked without using oil, for about half a minute on both sides.

Serve while still warm with ajvar and fresh vegetables of your choice.

You can bake it in the oven in a cast-iron pan to get a single larger pancake. In this case, the mixture will be enough for 2-3 pancakes.
