

Mushroom burger with pindjur

Succulent mushrooms, lentils and aromatic pindjur together create a real rhapsody of tastes and here we combined them into one irresistible burger. Ready in just twenty minutes and is very convenient to carry anywhere. And when it is served with crispy sweet potatoes, we guarantee that it will gather a crowd. The only thing we have to warn you about is that you have to make them in sufficient quantities for a second serving, since they are so delicious.
Mushrooms are known as a high-value food. In this recipe we used brown champignon mushrooms, but you can replace them with any other type of mushrooms that you like. Since mushrooms naturally contain a lot of water, if possible, clean them with a brush or cloth so as not to absorb the excess liquid. If you need to wash them under running water, gently wipe with a cloth and leave to air-dry thoroughly. Another way for mushrooms to let the excess liquid out is to cut them into thin slices and briefly bake in a preheated oven at 180C. Arrange them on a baking tray lined with baking paper and bake for ten minutes.
A real home-made pindjur with its full, aromatic taste of roasted red peppers, tomatoes, garlic and spices, makes these burgers particularly juicy and delicious. We recommend baking the burgers in the oven, and for additional gourmet hedonism, you can prepare them in a frying pan with a little oil.

Ingredients
500g champignon mushrooms or other drier mushrooms
250g of cooked lentils
1 onion
1 bunch of basil
150g of quinoa flour
100g of almond
2 tablespoons of pindjur
salt and pepper
2 tablespoons of oil (optional)
Directions
Clean the mushrooms with a brush and, if you have to wash them, dry well before preparing. Drain the cooked lentils well.
Put mushrooms, lentils, onions, basil, almonds, pindjur in a blender and process it all well. Add salt and pepper and continue grinding, gradually adding quinoa flour to get a burger-appropriate texture.
Shape the burgers that can be grilled in two ways. In a preheated oven at 200C in a baking pan lined with baking paper for 10 to 15 minutes or you can fry them in a pan with a little oil and at medium heat for a few minutes on each side.
The burgers can be served with ajvar, fresh salad and crunchy sweet potato fries.
