Beans and lentils burger, with ajvar

We tried and are now definitely convinced that burgers do not always have to be made of meat in order to be delicious. Our juicy burgers made of beans and lentils won even sworn meat lovers over with their taste and appearance - with a little help from ajvar.
In addition, one such meal has an extremely high nutritional value. Red beans, lentils and almonds are excellent sources of protein, but also fibers, good fats and numerous minerals that will make your organism very happy.
In order to have beans, lentils and other legumes always at the ready for this and other similar recipes, cook them in bulk, drain and freeze them. Take them out of the freezer about 30 to 40 minutes before preparation of this recipe, and in case you do not have enough time, you can also use canned ones. Just rinse and drain them before starting to prepare the burgers, so that the mixture would not be too soft due to excess liquids.
For this recipe we used toasted almonds, but you can also use raw ones, given that they undergo heat treatment. In any case, almonds and other nut vegetables should always be washed before use, by keeping them submerged in water. Rinse and dry in the oven with the help of ventilators or air-dry them. When they are dry, pack them in a glass jar and use as needed.
Now that we have all the main ingredients ready and at hand, we will need a mere 20 minutes for the preparation of these burgers. And additionally, a jar of ajvar of your choice, which gives the burgers that irresistible taste.

250g of cooked red salad beans
250g of cooked lentils
1 bunch of parsley
juice of 1 lime or half a lemon
200g of almonds
2-3 tablespoons of ajvar
6-8 tablespoons of minced flax seed
salt and pepper
2 tablespoons oil (optional)
Drain the lentils and beans well and place them in a blender together with the onion, parsley, almonds and ajvar. If you like spicy food, you can replace one tablespoon of ajvar with one tablespoon of ljutenica(spicy type of ajvar). Blend it all well, to a uniform mass that should not be completely smooth in order to for the burgers to retain a good texture.
Pour the mixture into a bowl, add salt and pepper to taste, then add the lime juice and spoon by spoon of minced flax seed until you get the burger-appropriate texture.
Shape the burgers that can be grilled in two ways. In a preheated oven at 200C in a baking pan lined with baking paper for 10 to 15 minutes or you can fry them in a pan with a little oil and at medium heat for a few minutes on each side.
The burgers can be served with ajvar, fresh lettuce and crunchy sweet potato fries.
