Avocado and basil spread sandwich with ajvar

We've already tried and tested the idea that avocado and ajvar are a fantastic pair. In this sandwich, we enriched them with still fresh, fragrant basil and lime for a true summer taste.
Basil has been a staple in kitchens around the world since ancient times. Even the name ancient Greeks gave to it, basilikon, translates as royal, and it speaks to how much basil was respected and loved. It is enough to smell it and taste it, in order to give it a royal place in our kitchen.
Basil is sensitive to cold, so if you are buying it in fresh twigs, keep it in a jar with some water at room temperature and out of direct sunlight. Better yet, basil can be easily grown on the terrace or by the window, in an ordinary pot, so fragrant, aromatic leaves can always be at hand. For example, for this suggestion of ours - the avocado and basil spread.
Ready in no time, this light, refreshing and nutritious avocado and basil spread can be prepared in a somewhat bigger quantity, packed in a glass jar and stored in the fridge for a few days for those moments when you need a quick and tasty meal. With the addition of homemade ajvar, of course.

1 ripe avocado
1 bunch of fresh basil
pinch of salt
Chop avocado and basil in a blender, add the lime juice and a pinch of salt and process well into a smooth mixture.
Slightly heat toast bread, and spread ajvar on one half and avocado on the other.
To prepare a folded sandwich, you will need three thin slices of bread. Spread the ajvar on the first slice, add another to which you will apply the avocado spread and cover it with the third slice of bread.
