Aromatic salad and ajvar on toast

We all love a tasty sandwich once in a while. In the morning, at night, sometimes even for lunch. When we’re in a rush, we eat one on the go, but if there is enough time we can turn it into a treat for all our senses.
Aromatic salad and ajvar on toast is precisely that kind of sandwich. It requires you pay attention, but it rewards you for it with fantastic taste.
You often hear sandwiches are best avoided, but this is a very healthy version. For the salad, first choose your favorite base: corn salad, rocket, chicory, spinach or some other fresh greens rich in vitamins. Next, add olive oil, balsamic vinegar and mixed seeds: pumpkin, sunflower, sesame, flax. They will give your salad a distinct taste, and boost it with Zink, Magnesium, Iron, vitamin E...
And just when you think it can’t get any better – surprise! If you combine your aromatic salad with ajvar, by spreading it on toast as a base, you will get a healthy, light sandwich unique in taste and aroma. So yes, it takes a bit more time, but it pays off in pleasure.

50g mix of green salads of choice: corn salad, rocket, chicory, spinach.
100g seeds: pumpkin, sunflower, sesame, flax
2 tbsp olive oil
1 tbsp balsamic vinegar
salt to taste
2 tbsp of ajvar
2 slices of toast
Wash and dry salad, then place it in a bowl.
Slightly roast the seed mix in a heated pan, just to get their natural oils and aromas going.
Mix in toasted seeds with the salad, and season with olive oil, salt and balsamico.
Spread ajvar over toasted bread, and cover with salad.
For more protein, you can add a boiled egg to this aromatic meal.
