For all us fans of spicy, gourmet food, tomato soup with rice and ljutenica is a perfect solution. Whether you serve it warm or cold, they say that this soup is so good that you won't be needing bread to go with it.

There are many recipes claiming that a fistful of rice is an indispensable ingredient of tomato soup. We agree that it's incredibly tasty. The common round grain rice will neutralise all excess sourness of tomatoes and it will give your tomato soup rich and thick texture and full flavour. To make sure that sour flavours of tomato are balanced, instead of sugar, we used sweet balsamic syrup which has characteristic sour sweet flavour giving our tomato soup a delicious aroma.

Ingredients

800 g fresh tomatoes

500 ml tomato juice

1 tablespoon of ljutenica

a fistful of fresh basil

100 g white round rice

salt and pepper to taste

1-2 tablespoons of olive oil

1 teaspoon of balsamic syrup

Directions

Dice fresh tomatoes. Wash basil and dry it thoroughly with cloth.

Heat the oil in a deep pot, add leaves of basil, and fry for a couple of seconds while stirring. Add diced tomatoes, pepper and salt to taste, stir and let simmer over medium low heat until tomatoes get soft and almost melt into thick sauce. Add ljutenica and rice, stir everything thoroughly, and pour tomato juice. Let cook until rice is done. Add flavour with a teaspoon of balsamic syrup.
