Tomato soup with ajvar, proso millet, and vegetables

This thick tomato soup with ajvar, proso millet and vegetables makes a whole meal, full of wonderful flavour thanks to home-made ajvar, which is the main ingredient.
Gentle proso millet and red lentils are subtle in flavour and they easily take on flavours of other ingredients which they share the pot with, which makes them a perfect addition to our soup, while their sweet taste helps neutralise the sour flavour of tomato. Proso millet is also known to absorb a lot of liquid after a while, so if needed, add water during cooking if you don't want your soup to be too thick.

800 g fresh tomatoes
800 ml tomato juice
3 tablespoons of ajvar
100 g proso millet
150 g red lentils
200 g baby spinach
300 g potatoes
salt and pepper to taste
1-2 tablespoons of olive oil
Dice peeled potatoes and soak them in cold water.
Dice fresh tomatoes. Heat the oil in a deep pot, add diced tomatoes, pepper and salt to taste, stir and let simmer over medium low heat until tomatoes get tender and almost melt into thick sauce.
Add ajvar, lentils, proso millet, potato dices, pour tomato juice over everything, lower the heat and let vegetables and proso millet cook thoroughly. If needed, add a bit of water while cooking.
Add spinach, increase the heat towards the end of cooking, and when soup starts bubbling, the dish is ready.
