Tofu scramble with ajvar

Ingredients

1 smaller onion

1-2 cloves of garlic

½ medium-sized courgette

1 green pepper

a few handfuls of spinach

200-250 g neutral-tasting tofu

½ teaspoon of turmeric (optional)

Salt and pepper to taste

Fresh dill

Olive oil

2 tablespoons of ajvar

Directions

Fry onions in olive oil until transparent. Add mashed garlic, chopped courgettes and pepper, turn up the heat and cover it with a lid. Stir from time to time. When the vegetables get soft (5-7 minutes), add condiments, washed spinach, crumbled tofu and fry for a few more minutes, while stirring thoroughly until everything is blended into a single mixture. Finally, add a few tablespoons of ajvar and mix again.

Serve with fresh salad, cornbread, or toasted brown bread.
