Quick baked breakfast with ajvar

Is there anyone who hasn’t used the snooze option on the alarm, at least once? Hardly. A great majority of us likes to sleep as long as possible. On weekdays, when you need to get up for work, every extra minute of sleep is sweet and precious. But when we finally manage to drag ourselves out of bed, the rush and the panic ensue.
Anyone who has ever tried to eat healthy knows you shouldn’t leave the house without breakfast. But it’s hard to think of something to make, in so little time.
Quick baked breakfast with ajvar is a legitimate option. It only takes a few minutes to make, then it’s just a matter of letting the oven do its thing. Just enough time for you to get ready for work.
With both you and the breakfast ready, all it takes is some thick yoghurt or fresh cheese to complete this perfect start of a day.

- Cook: 15 mins
- Yields: 1 plate
2 thin buckwheat pie crusts
1/2 dl milk
1-2 tbsp of ajvar
1 tsp oil
salt to taste
Mix eggs with milk, then add ajvar, salt to taste and stir until even.
Thoroughly soak the crusts in this mixture, and place them in an oiled casserole. Bake for 10-15 minutes at 180C, and serve with ajvar, thick yoghurt or fresh cheese.
